Job Requirements

  • High school graduate, some college or equivalent
  • Bachelor’s degree preferred
  • Minimum of five years of experience managing FOH Food and Beverage operations
  • Minimum of eight years of experience managing BOH Food and Beverage operations
  • Experience in several Food and Beverage departments
  • Ability to obtain and maintain required licenses, certificates, and permits
  • Experience with FOH operations and beverage management
  • Experience in Hotel culinary and Banquet operations
  • Ability to handle physical demands including lifting and moving up to 50 pounds occasionally
  • Flexibility to work variable days including weekends and holidays
  • Ability to work variable shifts including days, nights, and overnights
  • Ability to work ten to twelve-hour shifts
  • Must maintain high personal appearance and grooming standards

Job Qualifications

  • High school graduate, some college or equivalent

  • Minimum five years’ experience in management of FOH Food and Beverage operations
  • Minimum eight years’ experience in management of BOH Food and Beverage operations
  • Experience in several Food and Beverage departments required
  • Experience in Hotel culinary and Banquet operations required
  • Experience with FOH operations and beverage management a must
  • Must be able to obtain and maintain required licenses, certificates, and permits
  • Complete knowledge of Food and Beverage operations in an upscale property
  • Ability to handle pressure in a fast-paced environment
  • Excellent oral and written communication skills
  • Excellent organization skills
  • Proficient in Microsoft Word, Excel, and PowerPoint
  • Expert knowledge of Food and Beverage cost controls
  • Ability to motivate restaurant staff and maintain a cohesive team
  • Ability to suggestively sell menu items, beverages, and wines
  • Willingness to cook alongside BOH team

Job Duties

  • Plan and direct all day-to-day functions of the Food and Beverage department and consistently meet and exceed established goals
  • Implement all hotel and company policies
  • Implement effective food and beverage and labor cost controls
  • Establish prices and menus for each F&B outlet based on profitability and local competition
  • Monitor competition, review service satisfaction scores, and make appropriate recommendations
  • Assign and delegate tasks to managers of different F&B sub-departments to ensure profit objectives, service standards, food quality, safety, and cleanliness are met and exceeded
  • Manage all service aspects of the Food and Beverage department
  • Maintain a professional atmosphere throughout the Food and Beverage division
  • Ensure all Sonesta safety and sanitation standards are adhered to, including local liquor and food safety regulations
  • Maintain high standards of personal appearance and grooming
  • Perform other duties and projects as requested by management
  • Establish annual plan, monthly forecast, and marketing plan
  • Follow up on capital budget and all repairs and maintenance related to Food and Beverage operations
  • Direct and complete scheduled inventories
  • Develop and implement weekly work schedules for all food and beverage outlets in accordance with staffing guidelines and adjust schedules to meet business demands
  • Collaborate with Sales & Catering managers to develop attractive prices and menus based on profitability and local competition
  • Monitor payroll ensuring meal breaks and accurate time-cards
  • Manage operating budget and achieve all revenue and expense targets
  • Develop and monitor food and beverage budget and forecasting
  • Interview, hire, train, and promote Food and Beverage staff
  • Provide constructive and consistent feedback and recommend disciplinary action when appropriate
  • Coach and train Food and Beverage leadership team and hold them accountable for their performance
  • Ensure all F&B employees receive proper training
  • Manage performance evaluation process
  • Ensure fair and equitable treatment of employees
  • Provide coaching to improve knowledge, skills, and performance
  • Establish and maintain open, collaborative relationships with direct reports and the entire F&B team
  • Motivate employees to perform to their highest standard and establish a trusting environment
  • Focus on the mission and well-being of the division, hotel, and company
  • Lead by example and operate with integrity and respect
  • Inspire team to embrace and demonstrate Sonesta’s core values and guest service standards
