Job Requirements
- Valid driver’s license and working home telephone
- Ability to obtain required food production management certifications and licenses
- Must be able to communicate effectively in English
- Ability to read, write, and comprehend business and technical documents
- Strong mathematical skills including basic algebra and geometry
- Ability to apply common sense and reason to carry out instructions and make sound judgments
- Ability to lift and move up to 50 pounds
- Willingness to work varied hours including evenings, weekends, and holidays
- Ability to maintain professional conduct with guests and team members
- Ability to perform physical tasks such as standing, walking, climbing, and reaching
- Compliance with all health and safety regulations
Job Qualifications
- Culinary degree preferred or 3 years facility or culinary management experience in a high volume food service operation
- Experience using Microsoft Word, Excel, point of sale systems and digital menu boards
- Knowledge of supervisory principles and practices
- Strong customer focus
- High level of integrity and trust
- Excellent communication skills
- Ability to work cooperatively in team settings
- Strong organizational and time management skills
- Ability to work nights, weekends, and holidays
- Ability to perform under pressure during events
- ServSafe certification or ability to obtain within six months of employment
Job Duties
- Plan and direct kitchen administration, food production, menu development and pricing for all food and beverage services
- Ensure consistent presentation and quality of food and beverage products throughout the venue
- Assist in achieving food service profit objectives and quality standards
- Implement food cost and labor cost controls
- Manage food quality, food handling, training and team building
- Foster a motivated and empowered team environment
- Address guest concerns proactively and professionally
- Create and plan menus for catering, banquets, concessions, VIP and backstage areas
- Implement training programs and recipe cards including HACCP and sanitation guidelines
- Maintain vendor relationships and manage inventory and product availability
- Schedule kitchen teams and supervise employees to maximize productivity and control labor costs
- Conduct hiring, training, performance appraisal, and supervise kitchen staff
- Collaborate with sales and event planners to customize menus and culinary experiences
- Oversee food preparation and service during events
- Manage food, supplies, and labor according to budget requirements
- Ensure proper food temperatures, storage, labeling and freshness
- Maintain kitchen and concession equipment and sanitation standards
- Comply with all health codes and sanitation regulations
- Record waste and use waste control guidelines
- Work closely with venue leadership for food quality and service standards
- Actively engage and contribute to community and charitable organizations
- Perform other duties as assigned
