Job Duties
- assist g.m. in maintaining all company standards and s.o.p.s
- lead kitchen team
- know all menus, specific dishes, portionings, ingredients, and cooking methods
- assist in all areas of the kitchen
- maintain food quality and safety to company and health code standards
- run the line for effectiveness and efficiency
- provide guidance to junior kitchen staff members
- train all kitchen staff through methodical training procedures
- oversee and organize all areas of the kitchen
- ensure first-in, first-out food rotation system
- prep and stock cooking stations
- supervise food preparation and presentation
- verify food storage standards
- order, stock, and inventory food products and supplies
- coordinate with restaurant management on supply ordering, budget, and kitchen efficiency
