Job Requirements

  • Minimum five years experience in chef role in fine-dining full-service restaurant
  • relevant culinary training or equivalent experience
  • at least two years culinary managerial experience
  • ServSafe certification
  • current Washington State Food Handler's card
  • ability to work nights, weekends, holidays and long hours
  • ability to stand and walk for extended periods
  • ability to work in extreme kitchen temperatures
  • good manual dexterity and auditory and visual skills
  • strong organizational and time management skills
  • proficiency in Microsoft Office Suite
  • strong leadership and interpersonal skills

Job Qualifications

  • Minimum of five years experience in a chef role in a fine-dining, full-service restaurant
  • relevant experience or training through degree, certificate, apprenticeship or equivalent
  • at least two years of culinary managerial experience
  • ServSafe certification
  • current Washington State Food Handler's card
  • experience in high volume sales over 10 million a year preferred
  • high school diploma or equivalent preferred
  • proficiency in Microsoft Office Suite
  • exceptional understanding of P&L and cost controls
  • strong leadership abilities
  • excellent interpersonal, verbal and written communication skills

Job Duties

  • Achieve projected food cost percentages through security, waste control and inventory control
  • control labor through scheduling to meet budget
  • manage kitchen supply and uniform costs
  • ensure purchasing and preparation of food products meet company standards of consistency and quality
  • monitor food production to guarantee timing guidelines are met
  • handle all staffing responsibilities including hiring, training, scheduling, counseling, promoting and terminating
  • develop sous chefs and kitchen staff skills to build teamwork and morale
  • ensure compliance with health, sanitation, safety and employment regulations
  • perform administrative duties including approval of invoices, inventory taking, scheduling and team member records
  • maintain proper equipment maintenance and general cleanliness
  • enforce company policies and procedures and promote "Schwartz Brothers Way" of customer care
  • perform other duties as asked and directed
