Job Requirements
- Professional culinary degree or equivalent combination of culinary training and experience
- Majority of time spent using independent judgment in employment-related and business decisions
- Responsible for total kitchen production in absence of Executive Chef or Executive Sous Chef
- Ability to assist in new product development and menu costing
- Excellent customer service skills
- Ability to execute high volume production
- Excellent communication and organization skills
- Excellent culinary and food processing skills
- Experience in ordering, inventory maintenance, and shrink control
- Proficiency with automated reporting systems including inventory, food cost, scheduling, time and attendance, and labor
- Ability to maintain efficient operation and troubleshoot equipment
- Ability to supervise, train, and cross-train kitchen staff
- Ability to work flexible schedule including opening, closing, and weekend shifts

Job Duties
- Oversee daily responsibilities of line cooks and prep cooks in various kitchen areas
- Assist in scheduling kitchen staff to meet production needs within budget
- Maintain cleanliness and sanitation standards throughout kitchen, walk-ins, and storage areas
- Manage kitchen production in absence of Executive Chef or Executive Sous Chef
- Assist in new product development and menu costing
- Monitor inventory, food cost, and ordering procedures
- Train and cross-train kitchen staff
