Job Requirements

  • Majority of the time spent using independent judgment in employment-related and business decisions
  • Responsible for total kitchen production in absence of Executive Chef or Executive Sous Chef
  • Assist in new product development and menu costing
  • Professional culinary degree or equivalent culinary training and/or experience
  • Excellent customer service skills
  • Ability to execute high volume production
  • Excellent communication and organizational skills
  • Culinary and food processing skills
  • Experience in ordering, inventory maintenance, and shrink control
  • Proficiency with automated reporting systems
  • Ability to maintain efficient operation and troubleshoot equipment malfunctions
  • Ability to supervise, train, and cross-train kitchen staff
  • Maintain sanitation standards
  • Ability to work flexible schedule including opening, closing, and weekends

Job Qualifications

  • Professional culinary degree or equivalent combination of culinary training and experience
  • Excellent customer service skills

  • Excellent culinary and food processing skills
  • Experience in ordering, inventory maintenance, and shrink control
  • Proficiency with automated reporting systems including inventory, food cost, scheduling, time and attendance, and labor
  • Ability to supervise, train, and cross-train kitchen staff
  • Maintain sanitation standards throughout the work area

Job Duties

  • Oversee daily job responsibilities for line cooks and prep cooks
  • Manage artisan bread makers, cake decorators, pastry specialists, and bakery partners
  • Produce all necessary products for Chef's Case, Soup/Salad/Sandwich Bar, Catering, Bakery, Tortilleria, Bread Production, and Pastry areas
  • Assist in scheduling partners to meet production and budget guidelines
  • Maintain clean and sanitary work areas in the kitchen, walk-ins, and storage
  • Utilize independent judgment in making employment and business decisions
  • Assist in new product development and menu costing
