Job Requirements

  • Majority of time spent using independent judgment for employment and business decisions
  • Responsible for total kitchen production when Executive Chef or Executive Sous Chef is absent
  • Assist in new product development and menu costing
  • Excellent culinary skills and high volume production experience
  • Experience with inventory and shrink control
  • Proficiency with inventory, food cost, scheduling and labor reporting systems
  • Ability to troubleshoot and report equipment malfunctions
  • Ability to supervise and train kitchen staff
  • Ability to maintain sanitation
  • Flexibility to work varied shifts including weekends

Job Qualifications

  • Professional culinary degree or equivalent combination of culinary training and experience
  • Excellent customer service skills
  • Ability to execute high volume production
  • Strong communication and organization skills
  • Culinary and food processing expertise
  • Experience in ordering, inventory maintenance, and shrink control
  • Proficiency with automated reporting systems
  • Ability to supervise, train, and cross-train kitchen staff
  • Ability to maintain sanitation standards
  • Ability to work flexible schedule including weekends

Job Duties

  • Oversee daily responsibilities of line cooks and prep cooks
  • Manage artisan bread makers, cake decorators, pastry specialists and bakery partners
  • Produce products for Chef's Case, Soup/Salad/Sandwich Bar and Catering
  • Assist in scheduling partners to meet product demand within budget
  • Maintain clean and sanitary work areas in kitchen, walk-ins, and storage
  • Use independent judgment in making employment and business decisions
  • Serve as head of kitchen production in absence of Executive Chef or Executive Sous Chef
