Job Requirements

  • Proven experience in bakery production
  • Experience managing teams of at least 10 bakers and training new bakers
  • Experience planning production and sanitation standards
  • Ability to troubleshoot recipe and product issues
  • Able to work flexible shifts
  • Capable of physical tasks including lifting up to 50 lbs and managing over 70 lbs with assistance
  • Able to function in a fast-paced retail environment
  • Attention to customer needs
  • Occasional exposure to hot, cold, loud noises, and wet conditions

Job Qualifications

  • Leads team of bakery production partners
  • Graduation from baking or pastry school preferred
  • Experience in bakery production
  • Experience managing teams of at least 10 bakers
  • Training new bakers to proficiency
  • Knowledge of pastry basics including buttercream, icings, creams, pate a choux, sponge, and cheesecakes
  • Experience with rack ovens, kettles, large mixers
  • Knowledge of European style bread baking using preferments
  • Experience with deck ovens, bread dividers, and rounders

Job Duties

  • Use independent judgment in making employment and business decisions
  • Interview, review performance, provide feedback, and train bakery partners
  • Provide superior customer service and lead team for high-level service
  • Ensure production schedule meets forecast quantities
  • Maintain product quality, presentation, and stock levels
  • Support bakery manager with forecasting and production planning
  • Manage product waste effectively
  • Monitor product assortment, shrink, labor, and wrap expenses
  • Assist with product ordering and inventory control
  • Plan to meet budget goals
  • Sell products for promotional and special events
  • Manage merchandising for sales maximization and effective presentation
  • Maintain multiple vendor relationships
  • Ensure compliance with product freshness, safety, refrigeration, and sanitation standards
  • Organize and rotate coolers
  • Conduct food safety assessments and meet regulatory requirements
