Job Requirements

  • Proven experience in bakery production
  • Experience managing teams of at least 10 bakers and training new bakers
  • Experience in production planning and sanitation standards
  • Ability to troubleshoot recipe and product issues
  • Knowledge in pastry components manufacturing
  • Knowledge of European style baking using complex preferment
  • Ability to work flexible shifts
  • Ability to lift up to 50 lbs
  • Ability to safely manage loads exceeding 70 lbs with assistance
  • Physical ability to frequently stand, walk, and perform various reaches and physical tasks
  • Willingness to work in a fast-paced, retail environment with attention to detail
  • Ability to work with customers and respond to needs
  • Adherence to food safety and sanitation standards

Job Qualifications

  • Graduation from a baking or pastry school preferred
  • Experience leading a team of bakery production partners
  • Tortilla production experience preferred
  • Proven experience in bakery production
  • Experience managing teams of at least 10 bakers
  • Experience training new bakers to proficiency
  • Knowledge in pastry basics including buttercream, icings, cooked creams and curds, pate a choux, sponge, and cheesecakes
  • Experience with European style bakery and preferment methods
  • Familiarity with bakery equipment such as racks ovens, deck ovens, bread dividers, mixers

Job Duties

  • Use independent judgment in making employment-related and business decisions including product strategies, hiring, promoting, disciplining, and resolving partner-related matters
  • Conduct interviews, performance reviews, and provide partner feedback
  • Train and develop partners and manage department schedules
  • Ensure production schedule and quantities meet forecast
  • Ensure product quality, presentation, and in-stock conditions
  • Maintain high degree of product knowledge
  • Support Bakery Manager with daily and weekly duties including forecasting and production planning
  • Manage product waste effectively
  • Monitor product assortment, shrink, labor, and wrap expenses to meet budget goals
  • Support product ordering and inventory controls
  • Plan to meet weekly and long-term budget goals
  • Sell products for promotional and special events
  • Manage merchandising to maximize sales including signage and art display
  • Maintain multiple vendor relationships
  • Ensure compliance with all food safety and sanitation regulations
  • Oversee organization and rotation of coolers
  • Conduct regular ORT, self-assessments, and meet food safety requirements
