Job Requirements

  • Proven bakery production experience
  • Experience managing teams of at least 10 bakers
  • Experience training new bakers to proficiency
  • Experience in production planning and sanitation standards
  • Ability to troubleshoot recipe and product issues
  • Knowledge of pastry components and baking equipment
  • Knowledge of European-style bread baking techniques
  • Ability to work flexible shifts
  • Ability to lift up to 50 lbs
  • Ability to manage lifting of up to 70 lbs with safe practices
  • Ability to function in a fast-paced retail environment
  • Ability to perform physical tasks including bending, squatting, kneeling, reaching, and fine motor skills
  • Ability to work in various environmental conditions including hot, cold, wet, and noisy settings

Job Qualifications

  • Lead a team of bakery production partners
  • Preferred experience in tortilla production
  • Preferred graduation from baking or pastry school
  • Proven bakery production experience
  • Experience managing teams of at least 10 bakers
  • Experience training new bakers to proficiency
  • Ability to plan production and sanitation standards
  • Ability to troubleshoot recipe and product issues
  • Knowledge of pastry basics including buttercream, icings, cooked creams and curds, pate a choux, sponges, and cheesecakes
  • Experience with bakery equipment including rack ovens, kettles, and large mixers
  • Knowledge of European-style bread baking using preferments
  • Experience with deck ovens, bread divider, and bread rounder
  • Ability to work flexible shifts

Job Duties

  • Use independent judgment in making employment-related and business decisions
  • Interview, review performance, provide feedback, and train partners
  • Provide superior customer service and lead a service-oriented team
  • Ensure production schedule meets forecast
  • Maintain optimum product quality, presentation, and in-stock conditions
  • Manage product waste effectively
  • Support bakery manager in forecasting and production planning
  • Monitor product assortment, shrink, labor, and expenses to meet budget
  • Support product ordering and inventory controls
  • Plan to meet weekly and long-term budget goals
  • Sell products for promotional and special events
  • Manage merchandising for maximum sales and effective presentation
  • Maintain vendor relationships
  • Ensure compliance with food safety, freshness, refrigeration, and sanitation standards
  • Oversee cooler organization and rotation
  • Conduct regular food safety assessments and meet food safety requirements
