Job Requirements

  • Graduation from an accredited college or university with a two-year culinary degree and at least four years culinary experience in a restaurant or kitchen with catering experience or equivalent education and work experience
  • Ability to speak, read, write, and communicate effectively in English
  • Excellent communication skills both verbal and written
  • Strong interpersonal and team orientation skills
  • Exceptional organizational and supervisory skills
  • Knowledge of food and beverage menus, food preparation, and presentation
  • Serve-safe certification
  • Ability to work independently with minimal or no supervision
  • Ability to communicate employee needs and resolve complaints independently
  • Basic computational skills
  • Proficiency in Microsoft Outlook, Word, and Excel

Job Duties

  • Ensure successful in-house catering for FargoDome suites, meeting rooms, and backstage events
  • Develop menus within budget and event expectations
  • Establish positive relationships with suite holders, talent managers, and event coordinators
  • Suggest appropriate equipment for food preparation and presentation
  • Develop staffing plans and schedules for food preparation, serving, and breakdown
  • Prepare and serve appealing food meeting dietary and allergy restrictions
  • Procure food and beverage items for all FargoDome catering and suite events
  • Manage day-to-day operations of the Catering Kitchen
  • Ensure proper ordering, receiving, storing, labeling, dating, and rotating of food supplies
  • Ensure serve-safe training and sanitation compliance
  • Develop and model proper kitchen procedures
  • Assure adherence to menu standards, recipes, and procedures
  • Communicate dietary and allergy concerns to staff
  • Plan and execute function prepping, cooking, plating, and serving
  • Hire, schedule, train, coach, and evaluate part-time staff
  • Submit monthly catering product inventories
  • Maintain inventory levels to minimize spoilage
  • Clean and maintain department equipment
  • Follow safety and worker's compensation programs
  • Assist with training and orientation of new employees
  • Participate as a team player with all departments
  • Model professionalism, respect, and effective communication
  • Ensure suites and staff possess all necessary food and beverage components prior to events
