Job Requirements

  • ability to stoop, reach, walk, and stand for long periods
  • ability to lift boxes weighing up to 40 pounds
  • speak clearly and distinctly
  • work in a non-smoking environment
  • knowledge of health codes and ServSafe certification or willingness to become certified
  • possess or willing to apply for an ABC card and Beer card
  • pass a background check
  • pass a pre-employment drug test
  • availability to work variable and flexible days including evenings, weekends, holidays, and on-premises catering

Job Qualifications

  • previous experience managing and directing a multi-unit food and beverage department in a hospitality or hotel or attraction setting preferred
  • proficient knowledge of sanitation standards including HACCP, food safety, ServSafe principles, health department regulations, and liquor laws
  • thorough knowledge of food and catering operations including food production, beverage, supervisory aspects, service techniques, cost controls, and presentation
  • strong knowledge of inventory and control procedures and purchasing experience
  • knowledge of control and management systems for purchasing, receiving, storing, issuing, preparing and serving
  • ability to acquire and maintain ABC permit and ServSafe certificate
  • knowledge of food preparation and food safety techniques
  • food and beverage inventory control experience
  • ability to handle money and cash transactions accurately
  • skill to operate and clean restaurant equipment
  • catering knowledge
  • knowledge of Excel and Word
  • excellent communication and interpersonal skills
  • ability to prioritize and work with limited supervision
  • excellent attention to detail
  • ability to work with a wide range of people

Job Duties

  • manage and oversee all food and beverage outlets at Elvis Presley’s Memphis and The Guest House at Graceland
  • ensure compliance with Shelby County and Memphis health and safety standards and codes
  • monitor inventory levels and use POS and inventory management software
  • maintain knowledge of and comply with departmental policies, service procedures, and standards
  • resolve guest complaints to ensure satisfaction
  • maintain cleanliness, sanitation, and organization of outlets
  • oversee menu planning, food quality, delivery standards, cleaning, storing, ordering, staffing, and daily operations
  • manage catering for all onsite events
  • interview, hire, and train staff
  • resolve conflicts and problems in all areas
  • supervise and implement a service and management philosophy for staff guidance
