Job Description

Camp Sacramento is a seasonal camp operated under the City of Sacramento's Youth, Parks & Community Enrichment Department. Located amidst the scenic Eldorado National Forest in Twin Bridges, California, Camp Sacramento provides enriching outdoor experiences primarily aimed at youth. Operating seasonally from May through October annually, the camp plays a vital role in community enrichment by fostering learning, teamwork, and recreational activities in a natural setting. Job Requirements

  • Must be at least 18 years old by time of appointment
  • Six months experience preparing food in a cafeteria or restaurant
  • OR completion of a certificate from an accredited food management or culinary school
  • Pass a physical and a criminal background check
  • Pass a tuberculosis screening test
  • Successful participation in mandatory staff training
  • Completion of Mandatory Reporter training within two weeks of appointment
  • Provide own transportation to the Camp Sacramento site
  • Ability to exert physical effort involving walking, bending, stooping, standing for extended periods, lifting and carrying up to 50 pounds
  • Ability to work outside in various weather, terrains, and elevations
  • Availability to work weekend and night shifts
  • Possession of a valid California Class C Driver License and ServSafe certification are desirable

Job Qualifications

  • Knowledge of principles and practices of supervision and training
  • Knowledge of operation of commercial cooking equipment
  • Knowledge of principles, procedures, and equipment used in the storage, care, preparation, cooking, and dispensing of food in large quantity
  • Knowledge of kitchen sanitation and safety measures used in the operation, cleaning, and care of utensils, equipment, and work areas
  • Knowledge of proper food handling techniques
  • Knowledge of principles of menu planning and modifications for special diets
  • Ability to supervise, plan, coordinate, assign, and review the work of staff
  • Ability to train staff in proper methods of food handling, food preparation, and cooking techniques
  • Ability to follow and/or adjust formulas and recipes for food preparation in large quantities
  • Ability to plan and carry out the work of a given menu
  • Ability to order food and supplies in the correct quantity to meet menu requirements
  • Ability to prepare quantities of food required with minimal waste
  • Ability to maintain personal hygiene
  • Ability to establish and maintain effective working relationships
  • Ability to perform physical work
  • Ability to understand and carry out oral and written instructions
  • Ability to read, write, and speak English at a level necessary for satisfactory job performance

Job Duties

  • Supervise, schedule, and coordinate the work of food service staff in preparing and serving main dishes, meats, salads, desserts, and baked goods with minimal waste
  • Perform a variety of tasks to prepare food to be cooked and served, including cleaning, chopping, weighing, and measuring ingredients
  • Ensure the dining room, food preparation areas, and equipment used in preparing food are kept in clean, sanitary, and in proper working condition
  • Maintain high standards of sanitation and safety in the preparation and serving of food
  • Sanitize food preparation equipment and food preparation areas
  • Order and maintain inventory of food and supplies
  • Create meal menus with Camp Manager
  • Participate in all Camp Sacramento cleanup
  • Follow staff policies and procedures
