Job Requirements

  • Must be able to lift, handle, and carry food, smallwares, equipment, supplies, and paper goods weighing a minimum of 50 pounds constantly and up to 100 pounds occasionally
  • Must be able to stand and move well-paced for periods up to four hours or longer
  • Must be able to frequently bend, kneel, stoop, reach and squat to receive and store stock as well as work the line during service
  • Must be able to communicate effectively and listen attentively to supervisors, employees, vendors, and suppliers
  • Must be able to taste and distinguish flavors, spices, temperatures, mouth feel, and odors at appropriate levels
  • Must be able to work in an environment exposed to extreme cold (30 degrees), heat (above 100 degrees), loud noises, fumes, odors, dust, and smoke.

Job Qualifications

  • Experience working in a professional kitchen environment
  • Knowledge of broiling, cooking meats, poultry, and seafood
  • Ability to follow recipes and food safety procedures
  • Strong communication skills to coordinate with kitchen staff
  • Ability to supervise and manage a kitchen station
  • Familiarity with kitchen equipment and inventory management
  • High school diploma or equivalent preferred
  • Prior experience with food preparation standards and portion control.

Job Duties

  • Reports to work on time and is on broil station as indicated on the weekly work schedule
  • Uniform meets PML requirements and is maintained clean
  • Practices positive personal hygiene and cleanliness habits during all work shifts
  • Sets up the broiling station with all food preparation equipment, plateware, ingredients, smallwares and supplies following the Broil Station Checklist
  • Assists the Chef and/or Sous Chef in cutting meat, seafood etc. following specifications and quality standards
  • Communicates frequently with the Chef about any problems or discrepancies in the kitchen
  • Assists side cook and other kitchen personnel in food preparation as assigned
  • Supervises the kitchen line during service, coordinating food quality, flow, and timing
  • Ensures all food items are prepared to PML standards of quality, presentation, and timing
  • Maintains an organized, clean, and efficient broil station and kitchen line
  • Anticipates station overload and takes corrective measures
  • Stocks the oven with hot/cold plates at correct temperatures and restocks regularly
  • Checks par and stock levels for meats, poultry, seafood, condiments, garnishes, equipment, plateware and smallware
  • Selects correct cuts of meat for desired cooking temperature
  • Correctly seasons, cooks, and plates all entrées ensuring standards are met
  • Communicates with side and pantry cooks to synchronize food readiness
  • Maintains broiler temperature and condition, cleans broiler after shift
  • Upholds highest sanitation and food safety standards, reports unsafe conditions
  • Returns unused protein products to walk-in with completed inventory counts
  • Completes all station closing duties and assists kitchen manager and personnel with cleaning.
