Job Requirements

Job Duties
- Maintain complete knowledge of hours of operation and proper table set-ups for the dining area
- Maintain complete knowledge of expected number of meals to be served
- Maintain complete knowledge of safety and sanitation requirements
- Maintain complete knowledge of proper storage procedures
- Complete opening duties including checking quality and amount of breakfast stock using checklist
- Requisition necessary supplies according to standard
- Transport supplies and equipment to dining area
- Prepare and set up all condiments and non-alcoholic beverages
- Stock designated supply of silverware, glassware, chinaware, utensils, tools, and equipment for service
- Inspect cleanliness and condition of tables and service areas and rectify deficiencies
- Set tables
- Set up and prepare service line/areas
- Ensure all equipment is clean, in working order, and report maintenance problems
- Receive food from kitchen and place in designated holding areas at specified temperatures
- Defrost food, clean, and prepare produce as assigned
- Maintain supply levels of stock, food, and beverages throughout scheduled hours
- Monitor and maintain quality of all food and cleanliness on service lines
- Anticipate usage levels and report replenishment needs
- Obtain replacements for 86'd items as directed
- Greet and serve meals to hotel employees
- Remove soiled trays and wares from tables and separate items at breakdown station
- Wipe dining tables clean and replenish tabletop condiments
- Clean up spills immediately
- Breakdown all goods
- Return unused food to designated areas and store
- Clean and sanitize service lines, beverage equipment, and other equipment following procedures
- Restock stations for next meal period
- Complete closing side duties
- Clean and organize supply/storage closets
- Report any equipment damages, safety hazards, maintenance problems, and personnel problems
- Legibly document pertinent information in the logbook
- Sweep and mop the floor
