Job Requirements

  • Culinary education preferred
  • Minimum of 2 years of experience in restaurant and pastry including bread production
  • Must be able to write and speak clearly and effectively
  • Must be able to compose effective recipes
  • Must be able to convert recipes into larger and smaller batches
  • Must thoroughly understand weights, measures, and conversion of both
  • Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals
  • Requires heavy lifting of up to fifty pounds
  • Requires working entire shift standing up
  • Requires constant bending, stooping, and reaching
  • Must comply with all company policies and procedures
  • Regular and consistent attendance is required
  • Must be able to work well with other team members and managers and interact with guests

Job Duties

  • Cleanliness and organization of the bakeshop
  • Communication of all pastry-specific supplies and equipment needs
  • Proper rotation and monitoring of raw and finished products
  • Proper following of production rotation
  • Completing weekly bread inventory
  • Prepare all breads for breakfast, lunch, and dinner as well as special functions
  • Assist AM Pastry Cook with breakfast production
  • Prepare canapes
  • Help with receiving when applicable
  • Provide bread for tastings/tours
  • Aid in menu/recipe development
  • Deliver Brunch to the Main House on Sundays
  • Gluten-free flour blend and dietary pastries and bread production
  • Proper wrapping and storage of all pastry products
  • Assist with ordering all flour needs
  • Train and work on Farmer's market production shift
  • Individual, bi-annual goals
