Job Requirements

  • Culinary degree from an accredited institution or equivalent experience
  • 2-3 years direct experience in restaurant or hotel food and beverage field or 4-5 years related experience
  • High school diploma or equivalent
  • Excellent verbal and written communication skills
  • Ability to coach team members
  • Strong analytical and problem-solving skills
  • Ability to understand and interpret financial statements and manage food and beverage costs
  • Ability to exercise judgment and decision making based on job knowledge and company goals
  • Ability to work long hours, perform heavy lifting, stand for extended periods, handle hot pans and sharp knives
  • Ability to operate company vehicle or golf cart safely
  • Regular and consistent attendance
  • Ability to maintain professional workplace conduct
  • Ability to communicate effectively with guests, team members, and managers

Job Qualifications

Job Duties

  • Manage day-to-day kitchen service and production including product utilization and labor scheduling
  • Manage weekly menu matrix to optimize product quality, guest experience, and production efficiency
  • Assist in menu development, testing, training, and implementation
  • Collaborate with dining room management to ensure effective service and educate wait staff on menu and service knowledge
  • Schedule culinary and stewarding teams for full operational coverage and labor cost control
  • Track and report daily, weekly, and monthly food and labor costs
  • Oversee ordering, vendor relationships, and cost control for food and operations
  • Represent Blackberry Farm culinary team at external events as needed
  • Coach, counsel, and review cooks and stewards under guidance of the Executive Chef
  • Handle all kitchen maintenance issues
  • Maintain a professional kitchen environment
  • Communicate with other departments to ensure seamless hotel operations
  • Participate in managers meetings and relay information to kitchen staff
  • Comply with all company policies and procedures
  • Ensure regular and consistent attendance
  • Work well with team members, managers and guests
