Job Requirements

  • Must have working knowledge of production equipment
  • Ability to portion all boneless cuts of meat in an accurate and timely manner
  • Ability to reduce processing costs by cutting and sizing portions accurately while continuing to meet customer specifications
  • Ability to problem solve in trimming and product substitutions
  • Ability to work in a fast paced, high pressure, challenging environment
  • Must be a team player and possess a positive attitude
  • Ability to effectively communicate, both written and verbally, in English
  • Must demonstrate the ability to understand the Meat Buyer’s Guide specifications as they relate to the company’s internal product specifications

Job Qualifications

  • High school diploma or equivalent
  • Previous experience in meat cutting or butchery preferred
  • Ability to understand and follow detailed product specifications
  • Strong knowledge of meat quality standards
  • Proficiency with knives and cutting tools
  • Ability to communicate effectively in English, both verbally and in writing
  • Team player with a positive attitude
  • Knowledge of Meat Buyer’s Guide specifications considered a plus

Job Duties

  • Clean, trim, slice, and portion subprimals of beef, pork, lamb, and veal for future processing
  • Inspect meat products for defects, bruises, or blemishes
  • Accurately read and comprehend all customer specific instructions
  • Perform quality control checks and communicate with supervisors and managers regarding any defects
  • Separate meats and byproducts into specified containers and seal containers
  • Use knives, cleavers, and other equipment to perform meat cutting and trimming
  • Weigh meats and tag containers for weight and contents
  • Follow the company’s detailed product specifications
  • Perform other duties as assigned
