Job Requirements

  • High school diploma or equivalent
  • 1 year of BOH restaurant experience
  • ability to stand for extended periods
  • ability to walk, push, lift up to 250 pounds
  • ability to bend, reach, stoop, kneel or crouch
  • flexibility to work holidays and weekends

Job Qualifications

  • High school diploma or equivalent
  • at least 1 year of back of house restaurant experience
  • strong leadership and team management skills
  • knowledge of food safety and sanitation standards
  • excellent communication and interpersonal skills
  • ability to work in a fast-paced environment
  • basic proficiency in inventory management and production planning
  • understanding of sustainability practices in food service

Job Duties

  • Assign and direct kitchen associates to maximize productivity and minimize waste
  • interview, select, train, schedule, coach and support associates, ensuring performance aligns with brand and hotel standards
  • inspect daily use records with Executive Chef or Sous Chef to verify accuracy and compliance with estimates
  • manage food inventory by pulling needed food from walk-in boxes and utilizing leftovers
  • attend associates meetings to address problems and promote communication between food production areas
  • maintain good housekeeping practices and enforce a clean as you go policy
  • inspect all workstations including associates cafeteria
  • prepare daily production charts
  • support quality assurance improvement processes
  • encourage and develop upselling strategies to achieve financial success
  • implement incentive programs to support departmental goals
  • follow sustainability guidelines related to HHM’s EarthView program
  • practice safe work habits, wear protective safety equipment and follow MSDS and OSHA standards
  • perform other duties as requested by management
