Job Requirements

  • Ability to communicate effectively with guests, team members and management in both written and verbal form
  • high school diploma or equivalent
  • two years culinary experience in a related field preferred
  • must be at least 21 years of age
  • demonstrate competence in cooking fundamentals and professional terminology
  • demonstrated ability to develop culinary and beverage products in high-volume settings
  • analytical, problem-solving and critical thinking skills
  • comprehensive food knowledge including profit/loss, cost control, menu planning, budgeting, training, inventory control and sanitation
  • ability to work hands-on in various kitchen environments related to fine dining and high-volume production
  • ability to handle flexible schedules including weekends, holidays and shifts
  • ability to delegate, empower and evaluate team members
  • ability to work in a fast-paced environment
  • must obtain gaming license from Graton Gaming Commission
  • must possess or obtain California Food Handler Certification

  • hands-on experience in various cooking methods including butchering, baking, sautéing, and grilling
  • flexibility to work weekends, holidays, and varied shifts
  • leadership skills to delegate and empower team members
  • ability to work in a fast-paced environment
  • must be able to obtain a gaming license
  • must possess or obtain a California Food Handler Certification

Job Duties

  • Redefining hospitality while living and promoting the company values
  • assisting in the development of new menu items and culinary techniques
  • supervising kitchen activity including training and product development
  • planning and creating menus for core, group, and VIP selections
  • collaborating with farm team to use sustainable produce
  • conducting audits and vendor reviews to ensure quality
  • following health and safety regulations and conducting inspections
  • supporting line cooks in meal preparation
  • monitoring inventory and placing orders
  • conducting month-end inventory counts
  • fostering a cooperative work climate and serving as a mentor
  • maintaining quality control of products and kitchen workstations
  • ensuring compliance with health regulations and maintaining safe work areas
  • handling team member and guest opportunities
  • evaluating and coaching team members
  • scheduling staff and managing hours
  • conducting ongoing training sessions
  • leading team meetings and maintaining communication
  • managing team member records
  • participating in budgeting and cost control activities
