Job Requirements

  • must have previous kitchen experience
  • associate degree from college or technical school or equivalent combination of education and experience
  • must be or become ServSafe and allergen certified
  • ability to stand and walk regularly
  • ability to use hands and fingers to handle or feel objects
  • ability to frequently reach with hands and arms
  • regular ability to talk or hear, taste or smell
  • occasional ability to sit, stoop, kneel, crouch, or crawl
  • ability to lift and move up to 40 pounds occasionally
  • specific vision abilities including close, distance, and peripheral vision
  • availability to work varying shifts including weekends

Job Qualifications

  • associate degree from college or technical school
  • two years related experience and/or training
  • must be or become ServSafe and allergen certified
  • previous kitchen experience
  • ability to perform all essential duties satisfactorily
  • strong communication and leadership skills
  • knowledge of QA and health department standards
  • proficiency in inventory management and food safety
  • ability to work flexible shifts including weekends

Job Duties

  • assist operations managers with hiring for kitchen and stewarding positions
  • orientate and train associates per AC by Marriott guidelines for operations
  • interpret company policies and provide a safe working environment by ensuring compliance with safety programs such as ServSafe and health department rules
  • follow and maintain QA specifications and enforce compliance with staff
  • follow and maintain health department specifications and enforce with staff
  • assist with food orders and work directly with operations manager for inventory and Birch Street orders
  • maintain proper food and supply inventory levels
  • assist with writing reviews for culinary and stewarding staff
  • conduct write-ups and enforce department policies with staff
  • maintain all recipe specifications
  • inspect kitchen, coolers, freezers and storage areas for proper rotation of product
  • monitor all kitchen equipment and submit repair orders
  • verify all kitchen logs, cooler temperature logs and self-audits are accurate and up to date
  • monitor labor costs for kitchen and stewarding and assist with payroll
  • actively work in the kitchen during shifts and adjust staffing levels accordingly
  • prepare food quality and presentation expected by GM, operations manager and guests
  • conduct daily affirmations with staff
  • use other AHC hotels and staff as resources
  • answer emails and check voicemail
  • monitor kitchen food waste
  • maintain kitchen cleanliness and overall deep cleaning
  • update production charts, par levels and weekly prep
  • monitor proper food handling
  • complete purchase orders and submit to accounting or through Birch Street
  • provide employee food for each shift
  • attend department and manager meetings
  • communicate menu changes to staff
  • oversee stewards
  • enforce hotel green policies
  • check mailboxes
  • follow Marriott and health department specifications
  • check staff in and out each shift
  • ensure product availability
  • complete end of day reports
  • cover shifts as needed
  • perform additional responsibilities as assigned by general or operations manager
