Job Duties

  • maintains restaurant kitchen staffing levels to provide for optimal performance of all duties
  • administers and ensures adherence to departmental guidelines, policies and procedures
  • responsible for smooth, efficient, cost effective operation of restaurant food production activities, including labor management, inventory control, use of product and sanitation adherence
  • supervises and performs kitchen opening and closing operations
  • supervises and assists food handlers in preparation and production of hot and cold food items
  • orders raw food ingredients to prepare all menu items
  • ensures proper receipt and storage of raw food ingredients
  • supervises all aspects of food preparation and production, ensuring standardized recipes and plating guides are followed
  • organizes and assists food handlers to meet timely food preparation standards
  • monitors food preparation, production, holding and storage to comply with governmental food sanitation standards
  • performs frequent inspections of preparation and cooking equipment for cleanliness and proper operation
  • reports equipment maintenance needs to engineering
  • interviews, selects, trains, appraises, coaches, counsels and disciplines team members
  • follows new hire training and onboarding programs
  • reviews daily payroll reports and controls labor costs
  • attends required hotel meetings to stay informed
  • communicates daily with team members about activities and events
  • evaluates team member performance and sets goals
  • conducts meetings to keep department informed
  • other duties as assigned
