Job Requirements

  • At least 2 years previous culinary management experience in high-volume banquet or restaurant kitchen
  • College education and/or culinary degree preferred
  • Proven leadership and staff training skills
  • Ability to manage schedules, ordering, inventory and payroll
  • Strong English communication skills
  • Knowledge of batch and quantity cooking
  • Must be Serve Safe certified
  • Ability to lift, push, pull and carry up to 50 lbs
  • Must be able to work varied shifts including evenings, weekends and holidays
  • Proficient in computer use
  • Ability to maintain high standards of cleanliness and organization
  • Ability to work well under pressure in a fast-paced environment
  • Must be highly motivated and team-oriented

Job Qualifications

  • At least 2 years culinary management experience in high-volume banquet or restaurant kitchen
  • Culinary degree or college education preferred
  • Knowledge of current food trends and culinary concepts
  • Proven leadership skills with ability to train, develop and motivate staff
  • Ability to teach staff proper guest interaction and service recovery
  • Experience managing schedules, ordering, inventory, payroll and associate relations
  • Excellent communication skills in English, both verbal and written
  • Strong organizational abilities and multi-tasking in fast-paced environments
  • Familiarity with batch and quantity cooking
  • Proficient use of kitchen equipment and culinary tools
  • Highly motivated with focus on quality, cleanliness, and teamwork
  • Serve Safe certified food manager
  • Computer proficiency
  • Able to lift 50 lbs and work on feet for extended periods
  • Availability for varied shifts including evenings, weekends and holidays

Job Duties

  • Manage the daily production, preparation and presentation of all banquet food to ensure quality and consistency
  • Manage scheduling, training, development, coaching, and counseling of kitchen staff
  • Monitor, analyze and control labor and food costs, preparing necessary reports and schedules
  • Maintain purchasing, requisitioning and receiving standards in coordination with Executive Chef and Purchasing Supervisor
  • Assist in creating, costing and implementing banquet menus
  • Test and evaluate products for quality focusing on yield, holding, price and waste
  • Schedule staff according to budget and forecast
  • Plan and organize efficient utilization of food production and stewarding staff
  • Provide kitchen support during banquet functions
  • Inspect food service selections to maintain standards
  • Handle banquet food returns properly after functions
  • Ensure sanitation of kitchen facilities meets EcoSure and health codes
  • Maintain kitchen equipment in good working order
  • Oversee maintenance and cleanliness of walk-in coolers
  • Communicate expectations clearly to staff and ensure execution
  • Support and lead improvements in Medallia food quality scores
  • Manage sign-in and sign-out of contract kitchen staff
  • Assist restaurant cooks and staff as needed
  • Perform other related duties as assigned
