Job Requirements
- High school diploma or equivalent
- At least 2 years culinary management experience in banquet or restaurant kitchen
- Serve Safe food manager certification
- Ability to lift, push, pull and carry up to 50 lbs
- Ability to walk and stand for extended periods with frequent bending and twisting
- Availability to work evenings, weekends and holidays
- Proficiency in English communication
- Computer literacy
Job Qualifications
- At least 2 years of culinary management experience in a high-volume banquet or restaurant kitchen
- College education or culinary degree preferred
- Creativity and knowledge of new food concepts and trends
- Proven leadership skills with the ability to train, develop and motivate staff
- Ability to teach staff effective guest interactions and service recovery
- Experience managing schedules, ordering, inventory, payroll and associate relations
- Strong verbal and written communication skills in English
- Excellent organizational skills with multitasking ability in a fast-paced environment
- Familiarity with batch and quantity cooking
- Eye-hand coordination for using kitchen equipment
- Self-motivated with focus on quality, cleanliness and teamwork
- Proficiency with culinary tools and taste/smell evaluation
- Computer proficiency
- Serve Safe certified food manager
- Ability to work varied shifts including evenings, weekends and holidays
Job Duties
- Manage the daily production, preparation and presentation of all food for the banquet operations to ensure a quality and consistent product
- Manage associates including scheduling, training, developing, coaching, counseling, and conducting performance reviews
- Monitor, analyze and control all labor and food costs while preparing relevant reports and schedules
- Maintain control over purchasing, requisitioning and receiving items in coordination with Executive Chef and Purchasing Supervisor
- Assist in the creation, costing and implementation of banquet and outlet menus
- Test and evaluate product quality focusing on yield, holding qualities, market price and waste usage
- Schedule staff according to budget and business forecast
- Plan and organize the effective utilization of all food production and stewarding staff
- Provide kitchen support during banquet functions
- Inspect all food service selections during service to ensure standards are met
- Oversee proper handling and tracing of banquet food returns
- Direct sanitation and maintenance of kitchen facilities and equipment
- Ensure compliance with EcoSure and health code sanitation standards
- Support and lead to achieve Medallia food quality scores
- Check and control sign-in and sign-out procedures for contract kitchen staff
- Perform additional job-related duties including assisting restaurant cooks and staff as needed
