Job Duties

  • Review and understand the Banquet Event Order (BEO)
  • complete setup according to the BEO
  • set tables in assigned area correctly and uniformly using clean, pressed linen and clean unspotted silverware, china, and glassware
  • learn the menu for each function and explain major ingredients and preparation methods
  • stand in assigned station at least 15 minutes prior to function start time
  • acknowledge and respond to all guest requests advising supervisor if necessary
  • keep station neat and clean during service
  • continuously patrol assigned station refilling drinks and removing service items
  • ensure guests have everything they need
  • use proper in-room clearing and aisle tray breakdown procedures
  • return all reusable table complements and condiments for cleaning and refilling
  • assist Captain or Manager in setting up and breaking down buffet and special food service tables
  • set up, serve, and break down coffee breaks, receptions, and other special functions following policies
  • set up, tend, and break down banquet bars as assigned
  • follow cash and guest check procedures
  • return excess food to kitchen following sanitation guidelines
  • complete assigned side work such as refilling condiments, shaking and sorting linen, and cleaning serving equipment
  • assist steward in keeping banquet back hall, linen rack, and storage areas neat and organized
  • learn and apply all proper service procedures
  • assist co-workers whenever needed
  • remain up to date with hotel events and guests
  • maintain responsible alcohol service certification
  • mix and serve alcoholic and nonalcoholic drinks during banquet events
  • set up, service, and breakdown coffee break carts and areas
  • present breaks attractively and keep breaks clean
  • prepare beverages according to standards
  • secure all beverage coolers and lockable storage at shift end
  • assist set-up staff as necessary
  • know and abide by all company, hotel, and departmental policies and procedures
  • actively listen and understand guest and co-worker communication
