Job Requirements
- Ability to work in confined spaces
- Ability to perform duties in extreme temperature ranges for long periods

- Extensive knowledge of food products and preparation techniques including ethnic and fusion cuisine

- Ability to handle stressful situations with patience and diplomacy
- Hearing and visual ability to detect emergencies and assess food quality
- Finger/hand dexterity to operate food machinery
- Ability to grasp, lift and move goods up to 400 lbs on a continuous schedule
- Organized, articulate and well groomed
- Comfortable with media exposure
Job Qualifications
- High school diploma or equivalent preferred
- Graduation from accredited culinary school preferred
- Three years as banquet chef or sous chef in high volume luxury hotel environment
- Maricopa County Food Handlers Card
- Knowledge of creative menu development and cost control
- Ability to analyze data and maintain payroll and production control
- Strong communication and leadership skills
- Ability to effectively deal with customers and staff
- Artistic ability to create theme menus
- Additional language ability preferred (Spanish)
Job Duties
- Train, supervise and work with banquet kitchen cooks to prepare, cook and present food according to resort standards
- Delegate cleaning and production tasks as necessary
- Audit food storeroom items to maintain consistent quality and ensure adherence to health code
- Enforce safety procedures and cleanliness
- Monitor staff performance, product quality and production flow
- Assist in creating and implementing new banquet menus based on food trends and tastes
- Review event orders and supervise production considering waste, function size, demographic, cost and inventory
