Job Requirements

  • Twelve to fifteen years experience in kitchen covering all aspects of cooking
  • advanced courses or experience in kitchen administration
  • food handler's certification
  • proficiency in English reading, writing and speaking
  • strong leadership and communication skills
  • ability to stand and walk for prolonged periods
  • ability to lift up to 50 lbs
  • exposure to extreme temperatures

Job Duties

  • Meet budgeted food and labor costs
  • meet required Ecosure, Forbes and LQA standards
  • drive colleague engagement
  • ensure correct preparation and presentation of all food items
  • plan and develop menus considering availability, costs, marketing and servings
  • assign prices for menu items to ensure net profit
  • prepare and post employee work schedules within budget
  • prepare daily payroll reports
  • supervise all food preparation and cooking methods, portions, garnishing and presentation
  • coordinate and supervise ordering of food supplies and kitchen equipment
  • hire, train, discipline and organize kitchen personnel
  • complete performance evaluations for kitchen employees
  • hold regular meetings with kitchen staff and attend required meetings
  • treat employees fairly and consistently to maintain high morale and reduce turnover
  • maintain high levels of employee motivation
  • coordinate with Executive Chef and other directors on special food functions
  • supervise maintenance and cleanliness of food preparation equipment
  • develop and ensure a safe working environment
  • set up quality and portion control systems
  • create purchasing specifications
  • monitor and review food preparation quality and presentation
  • communicate regularly with Executive Chef
  • supervise stewarding department duties
  • monitor employee cafeteria quality and variety
  • communicate with purchasing department on quality and pricing
  • respond appropriately in emergencies
  • perform other tasks as assigned
