Job Requirements

Job Duties

  • Maintains restaurant kitchen staffing levels to provide optimal performance of all duties
  • Administers and ensures adherence to departmental guidelines, policies and procedures
  • Responsible for smooth, efficient, cost effective operation of restaurant food production activities including labor management, inventory control, product use and sanitation adherence
  • Supervises and performs kitchen opening and closing operations
  • Supervises and assists food handlers in preparation and production of hot and cold food items
  • Orders raw food ingredients necessary for menu items
  • Ensures proper receipt and storage of raw food ingredients
  • Supervises all aspects of food preparation and production, enforcing standardized recipes, plating, presentation, portion control and garnish requirements
  • Organizes and assists food handlers to meet Loews standards for timely preparation and service
  • Monitors food preparation, production, holding and storage operations to comply with Governmental Food Service Sanitation standards
  • Performs frequent inspections of kitchen equipment for cleanliness, sanitation and proper operation
  • Reports equipment maintenance needs to Engineering
  • Interviews, selects, trains, appraises, coaches, counsels and disciplines kitchen team members
  • Follows new hire training and onboarding programs
  • Reviews daily payroll reports and controls labor costs
  • Attends hotel meetings to stay informed about in-house activities, promotions and events
  • Communicates daily with team members to coordinate activities and information
  • Evaluates team members' performance and sets development goals
  • Conducts departmental meetings as required
  • Performs other duties as assigned
