Job Qualifications

  • High school diploma or equivalent
  • Prior experience in banquet food production and kitchen supervision
  • Proven ability to manage food cost and menu planning
  • Strong leadership and interpersonal skills
  • Excellent communication and organizational skills
  • Ability to work well under pressure and meet deadlines
  • Knowledge of food safety standards and regulations

Job Duties

  • Manage food production for banquet functions including menu planning and personnel supervision
  • Oversee food production for holiday buffets, Sunday brunch, and special occasions including menu development and costing
  • Assist in preparation of daily specials for restaurants when requested
  • Participate in hiring, training, and ongoing supervision of banquet food production staff
  • Maintain professional standards of conduct and appearance
  • Assist and relieve the Sous Chef when banquet volume is reduced
  • Monitor food cost goals and take corrective action as necessary
  • Perform special duties as assigned by the Executive Chef
  • Foster harmony between kitchen and front of house staff
  • Act as supervisor in absence of Executive Sous Chef and Executive Chef
  • Ensure coverage of scheduled dates and proper stocking of food products
  • Maintain cleanliness and organization of all storage areas including walk-ins and reach-ins
  • Fulfill additional duties directed by Executive Chef, Executive Sous Chef, or General Manager
