Job Qualifications
- High school diploma or equivalent
- Prior experience in banquet food production and kitchen supervision
- Proven ability to manage food cost and menu planning
- Strong leadership and interpersonal skills
- Excellent communication and organizational skills
- Ability to work well under pressure and meet deadlines
- Knowledge of food safety standards and regulations
Job Duties
- Manage food production for banquet functions including menu planning and personnel supervision
- Oversee food production for holiday buffets, Sunday brunch, and special occasions including menu development and costing
- Assist in preparation of daily specials for restaurants when requested
- Participate in hiring, training, and ongoing supervision of banquet food production staff
- Maintain professional standards of conduct and appearance
- Assist and relieve the Sous Chef when banquet volume is reduced
- Monitor food cost goals and take corrective action as necessary
- Perform special duties as assigned by the Executive Chef
- Foster harmony between kitchen and front of house staff
- Act as supervisor in absence of Executive Sous Chef and Executive Chef
- Ensure coverage of scheduled dates and proper stocking of food products
- Maintain cleanliness and organization of all storage areas including walk-ins and reach-ins
- Fulfill additional duties directed by Executive Chef, Executive Sous Chef, or General Manager
