Job Requirements

  • culinary management or supervisory experience required
  • must be able to break down whole muscle proteins and fish butchery
  • strong leadership and organizational skills
  • ability to work in a fast-paced, high-volume kitchen
  • knowledge of food safety and sanitation standards
  • excellent communication and teamwork abilities
  • associate’s degree in culinary arts preferred
  • ServSafe or Department of Health Certification preferred

Job Qualifications

  • five years of related culinary experience including one year at the management level
  • experience in restaurants, hotels, corporate dining, education, military, health care, or related food service operations
  • knowledge of food and industry trends focusing on quality, production, sanitation, safety, food cost controls, and presentation
  • ability to set up and distribute production sheets
  • supervisory, leadership, training, management, and coaching skills
  • ServSafe or Department of Health Certification preferred
  • computer skills with knowledge of MS Office products including Excel
  • associate’s degree in culinary arts preferred
  • farm to table and seasonal cooking mentality preferred

Job Duties

  • oversee all banquet production operations related to athletics and internal events
  • plan and direct food production for various sized meal periods
  • supervise, train, and lead production staff
  • manage inventory and ordering of food supplies
  • ensure adherence to food safety, sanitation, and health standards
  • collaborate to design menus and coordinate service execution
  • maintain cost control while delivering exceptional food quality and presentation
