Job Requirements
- culinary management or supervisory experience required
- must be able to break down whole muscle proteins and fish butchery
- strong leadership and organizational skills
- ability to work in a fast-paced, high-volume kitchen
- knowledge of food safety and sanitation standards
- excellent communication and teamwork abilities
- associate’s degree in culinary arts preferred
- ServSafe or Department of Health Certification preferred
Job Qualifications
- five years of related culinary experience including one year at the management level
- experience in restaurants, hotels, corporate dining, education, military, health care, or related food service operations
- knowledge of food and industry trends focusing on quality, production, sanitation, safety, food cost controls, and presentation
- ability to set up and distribute production sheets
- supervisory, leadership, training, management, and coaching skills
- ServSafe or Department of Health Certification preferred
- computer skills with knowledge of MS Office products including Excel
- associate’s degree in culinary arts preferred
- farm to table and seasonal cooking mentality preferred
Job Duties
- oversee all banquet production operations related to athletics and internal events
- plan and direct food production for various sized meal periods
- supervise, train, and lead production staff
- manage inventory and ordering of food supplies
- ensure adherence to food safety, sanitation, and health standards
- collaborate to design menus and coordinate service execution
- maintain cost control while delivering exceptional food quality and presentation
