Job Requirements
- High school education
- Minimum of 2 years formal culinary schooling
- Minimum of two years prior experience as an Executive Chef with knowledge of most international and domestic dishes
- Experience must be in a facility with food revenue and volume in excess of ten million dollars annually
- Ability to obtain Serve Safe certification
- Ability to obtain HPH Interviewing certification
- CPR certification and/or First Aid training preferred
- Knowledge of mathematical skills to interpret reports and budgets
- Knowledge of basic computer operations and inventory control software
- Ability to analyze data and make judgments for payroll and production control
- Ability to communicate effectively in English
- Ability to operate food machinery
- Ability to work in extreme temperature ranges and confined spaces
- Ability to supervise large staff and accomplish goals on time
- Ability to handle physical demands including lifting up to 400 lbs
- Ability to conduct meetings and maintain communication lines
- Ability to stand walk and/or sit for extended periods
- Ability to deal with customers with patience tact and diplomacy
- Hearing and visual ability to observe emergency situations and food quality

- Extensive knowledge of menu development insight to marketing cost and wage control
- Thorough knowledge of food products standard recipes and proper preparation
- Ability to analyze forecast data and make judgements to ensure proper payroll and production control
- Ability to read write and speak English to comprehend and communicate job functions
- Ability to operate food machinery and related equipment
- Ability to work under extreme temperature ranges and in confined spaces
- Ability to stand walk and/or sit continuously and perform essential functions for an extended period
- Ability to effectively deal with internal and external customers requiring patience tact and diplomacy
Job Duties
- Interview hire train supervise schedule and participate in activities of chefs cooks and other personnel involved in preparing cooking and presenting food in accordance with productivity standards cost controls and forecast needs
- Listen actively and communicate clearly while interacting with internal and external customers to promote food products and direct staff activities
- Analyze feedback from clients and associates make judgements and take action to implement suggestions for improvement
- Maintain working rapport with all hotel staff for efficient operation and service to customers
- Organize and conduct monthly culinary meetings
- Monitor staff performance product quality and production flow foster improvement where necessary
- Create and implement new menus and individual menu items for all outlets based on current food trends regional tastes and seasonal price fluctuations
- Audit food storeroom items market sheets and storage to maintain consistent quality products to ensure adherence to all health code requirements
- Enforce safety procedures and cleanliness throughout kitchen including walk-in and reach-in boxes
- Organize and conduct chef teambuilding classes for corporate clientele
- Represents the property in the media when the occasion arises
- Assists Director of Operations in estimating annual food budget
- Ensures compliance with all local state and federal rules and regulations
- Dines at local and regional restaurants to observe the latest trends in food presentation and pricing
- Prepare all food items according to recipe specifications
- Monitors outlets during peak periods to oversee production flow and presentation
- Maintains vacation schedule for proper staffing
- Report any equipment in need of repair to Chef and Engineering for service
- Performs other duties as requested such as VIP parties and staff meetings
