Job Duties

  • Supervise and manage culinary staff providing direct support to Executive Chef and Chef de Cuisine
  • Minimize operating costs in all food production
  • Collaborate with F&B Director and Executive Chef on capital expenditure items for food and beverage
  • Control overheads and achieve food cost budget
  • Report budget variances with reasons and remedial recommendations
  • Consult with F&B managers on banquet market potential and competitor offerings
  • Plan and implement menu design with suitable dishes and standard recipes
  • Control equipment and schedule maintenance
  • Ensure smooth daily operation and guest satisfaction
  • Maintain purchasing and receiving standards
  • Work with purchasing and food and beverage controller on product quality and control
  • Forecast food quantities for maximum profitability
  • Oversee recipe creation and production methods
  • Maintain knowledge of local and international market trends
  • Monitor competitors' food production and offerings
  • Assist with promotion of in-house culinary sales activities
  • Organize efficient use of food production staff and control overtime
  • Recruit and interview suitable staff with HR and F&B management
  • Oversee training and development of banquet culinary staff
  • Comply with state employment and industrial legislation
  • Coach and counsel associates and managers
  • Complete performance evaluations
  • Participate in food and beverage department meetings and trainings
  • Promote Omni culture and values
