Job Duties

  • supervise and manage culinary staff providing direct support to the executive chef and chef de cuisine
  • ensure operating costs in all food production are minimized
  • work with the f&b director and executive chef on capital expenditure items for the food and beverage department
  • control all overheads and achieve food cost budget throughout the year reporting variances with recommendations
  • consult with f&b department managers on market potential for banquets relating to competitors and product availability
  • plan and implement menu design creating suitable dishes and standard recipes for costing
  • control equipment and schedule maintenance
  • ensure guest satisfaction with smooth operation
  • maintain control of standards for purchasing and receiving items
  • work closely with purchasing and food and beverage controller to maintain purchasing standards
  • test and evaluate products for quality and wastage
  • control food requisitioning by forecasting volume to maximize profitability
  • oversee creation of recipes and production methods
  • maintain up-to-date knowledge of local and international market trends
  • maintain up-to-date knowledge of competitor food offerings
  • assist in promotion of in house sales activities such as culinary festivals and competitions
  • plan organize and control utilization of food production staff especially scheduling overtime
  • interview and recruit staff with hr and management
  • oversee training and development of banquet culinary staff ensuring on and off the job training
  • be aware of state employment legislation
  • coach and counsel associates and managers completing performance evaluations
  • participate in critical path task sheets for the food and beverage department
  • conduct and attend department meetings and company training
  • champion and drive the power of one omni culture
