Job Requirements
- Any combination of education, training or experience that provides required knowledge, skills and abilities
- high school diploma or equivalent
- associate degree or one to two years post-high school education preferred
- culinary or apprenticeship program desirable
- minimum three years experience as a cook
- minimum two years experience in a similar environment
- supervisory experience
- must read, write, speak and understand English
- able to grasp, carry and lift supplies up to 50 lbs
- sufficient manual dexterity with kitchen tools
- operate kitchen equipment including slicer, mixer, blender, stoves, oven, broiler
- intermediate mathematical skills
- perform duties standing long periods in confined space and extreme temperatures
- make quick and accurate decisions under stress
- full use of senses of hearing, taste, smell, touch and sight
- comply with OSHA personal protective equipment requirements including safety shoes, gloves, back belts, aprons
Job Qualifications
- High school diploma or equivalent
- associate degree or one to two years post-high school education preferred
- culinary or apprenticeship program desirable
- minimum three years experience as a cook
- minimum two years experience in a similar environment
- supervisory experience
- additional language ability preferred
Job Duties
- Manage the daily production of food for all catered events
- control food and labor costs
- ensure preparation, plating and presentation standards are maintained
- prepare appropriate quantity of food
- follow safety standards and regulations to provide top quality food
- supervise banquet kitchen employees
- hire, schedule, train, develop, empower, coach and counsel staff
- resolve problems
- provide open communication
- recommend and conduct performance and salary reviews
- recommend discipline as appropriate
- analyze Banquet Event Orders
- plan and coordinate functions with Catering staff to meet or exceed customer expectations
- monitor and control kitchen maintenance and sanitation
- ensure compliance with federal, state, corporate and franchise standards and regulations
- assist in creation and planning of menus
- implement changes to attract business
- assist with management of overall kitchen as required
