Job Requirements
- High school diploma or equivalent
- Several years of professional culinary experience in banquet or large-scale food service
- Current Serve Safe certification
- Ability to work flexible hours including weekends and holidays
- Strong organizational and multitasking abilities
- Excellent physical stamina to work in a kitchen environment
- Commitment to maintaining food safety and sanitation standards
- Strong leadership qualities and ability to manage a team effectively

Job Duties
- Executing and fulfilling banquet event orders
- Planning and directing food preparation and culinary activities
- Customizing menus for weddings, corporate and social groups
- Maintaining a safe and clean work environment in the banquet kitchen and surrounding areas
- Ensuring stewarding responsibilities are fulfilled throughout the hotel with the help of the Executive Steward
- Hiring and training Banquet cooks, Cafe East cooks, and utility workers
- Developing and implementing a seasonal based menu for Cafe East that supplies food to the pool (seasonal) and 19th and Timber (when open)
- Developing Cafe East weekly specials that drive revenue and interest from the general public and residents on social media
- Developing special event menus for events such as wine dinners and wine & bourbon tastings and executing those menus
- Executing any outside catering needed by management
- Developing and executing new and innovative amenity selections for guests
- Supplying the employee cafeteria with daily lunch selections
- Driving the overall success of the resort based on company values and principles
- Building experiences that meeting planners and guests want to share
- Fostering forward-looking innovation
- Displaying fundamental cooking expertise required for specialty menus, guest tastings, and themed functions
- Guiding menu development and food presentations
- Staying on trends with food and beverage concepts
- Staying current on buffet presentations
- Creating menu items for sales and catering seasonally
- Guiding menu purchasing and specifications
- Establishing performance, budget, and team goals
- Managing food, labor, and consumable costs
- Leading with new cooking techniques and recipes, continuously learning new skills
- Planning and managing the procurement, production, preparation, and presentation of all food in the hotel in a safe, sanitary, and cost-effective manner
- Maintaining commitment to quality of food products to ensure that NC Health Department, OSHA and all safety standards are met
- Leading compliance and associate adherence in food handling and sanitation standards and certifications
- Maintaining Serve Safe Certification
- Maintaining and updating MSDS manual as needed
- Developing and implementing staff safety standards and practices
- Executing weekly safety meetings
- Ensuring a high-engagement team and collaborative culture by supporting an open-door environment
- Guiding growth and development of staff to support business objectives and career progression
- Actively participating in the hiring process to identify the right talent
- Demonstrating honesty, integrity and modeling appropriate behaviors
- Teaching and training staff to prepare and present with the highest standards
