Job Requirements

  • Relevant experience in artisan breadmaking or similar bakery production
  • Ability to work overnight shifts consistently
  • Proven leadership experience in a bakery or food production environment
  • Strong knowledge of food safety and sanitation practices
  • Physical ability to handle high-volume production demands
  • Willingness to adapt and innovate in production processes

  • Deep passion and expertise in sourdough and artisan breadmaking
  • Experience in a high-volume production bakery or restaurant group
  • Strong technical knowledge of dough development, fermentation, and baking science
  • Leadership skills with the ability to guide, train, and inspire a team

  • Excellent communication and organizational skills

Job Duties

  • Lead overnight bread production with an emphasis on sourdough breads and long-fermentation techniques
  • Collaborate with the Executive Pastry Chef to develop and refine recipes, introduce new products, and ensure consistency across all outlets
  • Manage production for multiple channels including Copain's retail bakeries, Noble Food & Pursuits restaurants, and wholesale clients
  • Oversee dough mixing, shaping, proofing, baking, and packaging to ensure the highest quality standards
  • Maintain cleanliness, food safety, and organization throughout the bakery
  • Provide leadership and direction to overnight staff, ensuring efficiency and attention to detail
