Job Requirements
- high school diploma or GED required
- minimum two years of food and beverage experience in a high-volume pastry kitchen or bakery
- must be able to read, write, and communicate in English
- must be able to perform simple mathematical operations
- must obtain and maintain a current Food Handler's Card
- at the discretion of the San Manuel Tribal Gaming Commission, may be required to obtain and maintain a gaming license
- no driving responsibilities required
- availability to work evening, weekend, and holiday shifts
- ability to work in a fast-paced, high-demand environment
- physical ability to exert up to 10 pounds of force occasionally and/or move up to 40 pounds occasionally
- must present a neat, clean, and well-groomed appearance according to departmental policy
Job Qualifications
- high school diploma or GED
- culinary degree from an accredited culinary institute preferred
- minimum two years of food and beverage experience in a high-volume pastry kitchen or bakery
- ability to read, write and communicate in English
- ability to perform simple mathematical operations including addition, subtraction, multiplication, and division
- ability to provide friendly and efficient service to guests and team members
- clear and effective communication skills
- ability to work under pressure by staying calm and efficient during busy periods
Job Duties
- Combine all standard mixes and ingredients for cakes, pies, brownies, breads, and specialty pastries as assigned
- mix, bake, and finish all products as necessary
- garnish all service trays, cakes, and pastries for proper presentation
- prepare all items according to recipe standards
- maintain a comprehensive understanding of all food products utilized in the bakery, including their characteristics, uses, and storage requirements
- utilize precise measurements to ensure consistency and quality in food preparation
- apply basic knife skills effectively ensuring ingredients are prepared accurately and safely
- provide support to the assistant pastry chefs in the preparation and presentation of special functions and projects
- demonstrate knowledge of the first-in, first-out (FIFO) for all products
- label and date all food products at their respective station and the bakery as a whole
- certify expiration dates are met and dispose of expired items properly
- maintain complete knowledge of and comply with all department policies, service procedures, and standards
- report all discrepancies, accidents, and hazards to management
- perform other duties as assigned to support the efficient operation of the department
