Job Requirements

  • High school diploma or equivalent
  • Prior experience in a baking or pastry role
  • Ability to stand and walk constantly during shifts
  • Ability to lift up to 40 lbs occasionally
  • Willingness to perform kneeling, pushing, and pulling tasks
  • Ability to ascend or descend ladders, stairs, and ramps occasionally

  • Knowledge of proper time management
  • Ability to produce decorative centerpieces
  • Familiarity with pastry equipment maintenance and cleaning

  • Ability to produce special occasion cakes

Job Duties

  • Plan production for the Baking department according to hotel needs in absence of pastry chef
  • Demonstrate and use proper time management skills
  • Train staff using approved production methods
  • Produce centerpieces in various mediums such as salt dough, décor dough, dead dough
  • Train staff in proper usage, maintenance, and cleaning of all pastry equipment
  • Requisition supplies and equipment and ensure proper storage
  • Maintain production records
  • Participate in production of all items when required
  • Supervise production of all baking items to maintain pastry shop mise en place levels
  • Maintain clean and organized pastry shop following sanitation guidelines
  • Properly store unused ingredients for reuse
  • Write and follow staff schedules
  • Produce special occasion cakes as needed
  • Maintain a personal log of approved formulas from Executive Pastry Chef
