Job Requirements
- Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency
- Must be able to obtain and maintain a Washington State Health Card (Food Worker Card)
- At least 2 years of relevant baking experience
- Ability to work various shifts including nights, weekends and holidays
- Ability to lift and move up to 50 pounds
- Must demonstrate punctuality and reliability
- Ability to follow health and safety regulations
- Ability to maintain clean and sanitary work environment
Job Qualifications
- Exceptional guest service skills required
- At least 2 years relevant work history baking large bulk batches
- Experience in high volume scratch baking, bread doughs, cakes, wedding cakes and pastry/cake decorating
- Highly detail oriented, punctual, and reliable
- Ability to work quickly and efficiently in a fast-paced, multi-tasking environment
- Positive, willing to learn, friendly and outgoing attitude
- Ability to work independently
- Strong and outgoing verbal communication skills face-to-face
- Ability to maintain professional, courteous and effective working relationships with all organizational levels and business contacts
- Ability to accurately follow directions from management
- Must be able to lift and move moderately heavy items regularly
- Strong verbal communication skills
- Ability to communicate clearly with all kitchen staff
- Capability to manage flow and timing of finished products during shifts
- Basic math skills including addition, subtraction, multiplication and division using whole numbers, fractions and decimals
Job Duties
- Assists Pastry Chef in creating quality baked goods and coaching/mentoring the assistant baker
- Assist in forecasting usage based on set pars using a product mix
- Assist in maintaining inventory of bakery supplies
- Understands and complies consistently with standard portion sizes, cooking methods, quality standards and kitchen policies, coaching assistant baker on these standards
- Maintains a clean and sanitary workstation including tables, shelves, grills, broilers, fryers, flat top range and refrigeration equipment
- Reports equipment and food quality problems to supervisor in a timely manner, passing concerns from assistant baker
- Informs supervisor immediately of product shortages
- Uses standard recipe cards for preparing products and adds new recipes as needed/requested
- Uses all kitchen equipment following proper procedures and assists in training assistant bakers on equipment use
- Communicates with assistant baker and Pastry Chef regarding food usage and quality control
- Follows proper HAACP guidelines when handling, preparing, storing or stocking food
- Attends all mandatory department, casino, and training meetings
- Follows all department and casino policies, procedures and regulations
- Ensures compliance with Tribal, State, Federal and NIGC regulations
- Ensures control/protection of company assets
- Works days, nights, weekends, special events and holidays as needed
- Performs other duties as assigned
