Job Requirements

  • High school diploma or equivalent
  • minimum of 3 years culinary experience in a professional kitchen
  • prior supervisory or leadership experience preferred
  • knowledge of health and safety regulations
  • ability to stand for extended periods and work in a fast-paced environment
  • strong organizational and multitasking abilities
  • flexible availability including nights, weekends, and holidays

Job Qualifications

  • Culinary arts degree or equivalent professional culinary experience
  • previous experience in a supervisory or sous chef role in a high-volume kitchen
  • strong knowledge of food safety and sanitation standards
  • excellent leadership and team management skills
  • ability to develop and execute recipes consistent with brand standards
  • proven skills in inventory management and cost control
  • effective communication and interpersonal skills
  • ability to work under pressure and maintain high-quality standards in a fast-paced environment

Job Duties

  • Redefine hospitality at Graton Resort & Casino while promoting company values
  • perform responsibilities according to company standards, policies, and procedures
  • oversee daily kitchen operations including food production, team coordination, and service efficiency
  • direct, mentor, and support kitchen staff to adhere to food preparation standards
  • develop and execute recipes aligned with brand and guest expectations
  • ensure food quality, consistency, taste, presentation, and portion control
  • manage production planning based on events and forecasts
  • maintain inventory and implement cost control measures
  • enforce safety and sanitation standards in compliance with health and OSHA regulations
  • create and manage staff schedules to optimize labor cost and staffing levels
  • uphold department policies and foster a positive work environment
  • manage employee performance with feedback, coaching, and corrective action
  • maintain accurate records on attendance, payroll, and coaching documentation
