Job Requirements
- High school diploma or equivalent
- minimum of 3 years culinary experience in a professional kitchen
- prior supervisory or leadership experience preferred
- knowledge of health and safety regulations
- ability to stand for extended periods and work in a fast-paced environment
- strong organizational and multitasking abilities
- flexible availability including nights, weekends, and holidays
Job Qualifications
- Culinary arts degree or equivalent professional culinary experience
- previous experience in a supervisory or sous chef role in a high-volume kitchen
- strong knowledge of food safety and sanitation standards
- excellent leadership and team management skills
- ability to develop and execute recipes consistent with brand standards
- proven skills in inventory management and cost control
- effective communication and interpersonal skills
- ability to work under pressure and maintain high-quality standards in a fast-paced environment
Job Duties
- Redefine hospitality at Graton Resort & Casino while promoting company values
- perform responsibilities according to company standards, policies, and procedures
- oversee daily kitchen operations including food production, team coordination, and service efficiency
- direct, mentor, and support kitchen staff to adhere to food preparation standards
- develop and execute recipes aligned with brand and guest expectations
- ensure food quality, consistency, taste, presentation, and portion control
- manage production planning based on events and forecasts
- maintain inventory and implement cost control measures
- enforce safety and sanitation standards in compliance with health and OSHA regulations
- create and manage staff schedules to optimize labor cost and staffing levels
- uphold department policies and foster a positive work environment
- manage employee performance with feedback, coaching, and corrective action
- maintain accurate records on attendance, payroll, and coaching documentation
