Job Requirements
- College degree or Culinary Arts Degree preferred
- 2 years progressively more challenging pastry experience in a large volume, high quality establishment
- Knowledge of baking and pastry work including artisan style bread production, ice cream and sorbet production, sugar and chocolate work, centerpieces, high volume cake production, cake decorating and finishing skills preferred
- Must be able to work in a fast-paced environment with multiple tasks under time constraints
- Must be able to handle heavy business volume and sensitive situations relating to staff and guest problems in a timely manner
- Ability to listen and respond to visual and aural cues
- Must be able to work in areas containing dust, second hand smoke, varying noise, temperature levels, lighting, vibration, crowds and air quality
- Must be flexible with schedule including nights, weekends, and holidays
- Will be subject to call 24 hours in case of emergency or facility need
Job Qualifications
- Must be able to operate bakery equipment such as mixers, sheeters, ovens, conical rounders, roll make up equipment, automated dividers, batch freezers and proof boxes
- Good oral and written communication skills including tact when dealing with difficult situations
- Fluent and literate in English
- Excellent interpersonal skills and organizational ability
- Proficient in Excel, Word, Power Point, Access and Microsoft Outlook
- Ability to prioritize multiple projects and meet strict deadlines
- Ability to understand and analyze Budget and P&L Statements
- Ability to respond calmly and make rational decisions in stressful situations with co-workers, guests and vendors
- Ability to stand and walk and move easily around entire property for entire shift
- Physically able to push, pull, carry and lift up to 50 lbs, and perform various physical activities such as bending, twisting, stooping, crouching, kneeling and balancing
- Ability to uphold and demonstrate the highest level of integrity in all situations
Job Duties
- Ensure completion of daily production and decorating of all baked and finished goods for all property outlets
- Administer all aspects of food preparation ensuring bakeshop is clean, well stocked and problem-free
- Refresh product offering to reflect bakery trends and new products
- Recommend changes on all standard menus and recipes
- Improve food costs, volume, quality, attractiveness and efficient preparation of all baked goods
- Meet or exceed all State of Iowa and Harrah's sanitation requirements
- Support safety and accident prevention programs
- Assist Pastry Chef with budgets, profit and loss statements, cost analysis, and planning for promotions and events
- Manage bakery team members operations including hiring, training, coaching, mentoring and performance management up to separation
- Coordinate workflow during shifts to meet business demands and ensure customer satisfaction
- Achieve desired results through staff development and training programs, procedures and guidelines
- Monitor results through inspection, evaluation and analysis making changes as necessary
- Ensure regulatory, internal controls and policy compliance
- Present oneself as a credit to the company and encourage others to do the same
- Perform other related duties as assigned
