- Culinary degree and/or certificate
- Minimum 3 years of experience in a restaurant business
- One to two years of supervisory experience
- Bilingual and knowledge of Japanese cuisine preferred but not required
- Strong analytical and problem-solving skills

Job Duties
- Assist with documentation of recipes, allergy information, critical path, and culinary path
- Pay attention to food, beverage, and labor costs and discuss with management
- Analyze causes of fluctuations and take corrective action if needed
- Assist with administering skill tests and documenting results
- Assist with other administrative tasks for the culinary department
- Estimate and schedule food preparation volumes
- Arrange contractor's services in cooperation with management
- Adhere to sanitation standards and company food handling standards
- Enforce company behavior and corporate rules
- Maintain accurate record-keeping for HACCP program
- Follow safety directives
- Ensure kitchen and food storage cleanliness and organization
- Identify and report hazardous behavior and take corrective action
- Handle issuance and record-keeping of coaching/praise documents
- Keep records of culinary training
- Assist with employee schedules and timesheets
- Follow company policies
- Perform other duties as requested
