Job Requirements

  • High school diploma
  • Culinary degree and/or certificate
  • Minimum 3 years of experience in a restaurant business
  • One to two years of supervisory experience
  • Bilingual and knowledge of Japanese cuisine preferred but not required
  • Strong analytical and problem-solving skills
  • Attention to detail

Job Duties

  • Assist with documentation of recipes, allergy information, critical path, and culinary path
  • Pay attention to food, beverage, and labor costs and discuss with management
  • Analyze causes of fluctuations and take corrective action if needed
  • Assist with administering skill tests and documenting results
  • Assist with other administrative tasks for the culinary department
  • Estimate and schedule food preparation volumes
  • Arrange contractor's services in cooperation with management
  • Adhere to sanitation standards and company food handling standards
  • Enforce company behavior and corporate rules
  • Maintain accurate record-keeping for HACCP program
  • Follow safety directives
  • Ensure kitchen and food storage cleanliness and organization
  • Identify and report hazardous behavior and take corrective action
  • Handle issuance and record-keeping of coaching/praise documents
  • Keep records of culinary training
  • Assist with employee schedules and timesheets
  • Follow company policies
  • Perform other duties as requested
