Job Requirements

  • At least 2 years experience in a lead kitchen role in a full-service restaurant
  • Be 21 years of age or older
  • Have reliable transportation to and from work
  • Must pass federally mandated E-verify process
  • Able to reach, bend, stoop and lift up to 50 pounds
  • Able to work in a standing position for up to 9 hours
  • Self-disciplined and take initiative
  • Excellent communication and leadership skills
  • Pleasant, polite manner and neat, clean appearance
  • Able to communicate clearly and effectively with team and guests

Job Duties

  • Promote work and act in a manner consistent with the mission of A. Marshall Hospitality
  • Ensure all food and products are prepared and served according to recipes, portioning, cooking and serving standards
  • Work with managers to plan and price menu items and prepare standard recipe cards
  • Supervise activities of cooks and workers engaged in food preparation
  • Plan, direct or supervise cooking activities of multiple kitchens or restaurants
  • Monitor sanitation practices to ensure compliance with standards and regulations
  • Check quality of raw or cooked food products to ensure standards are met
  • Check and maintain proper food holding and refrigeration temperature
  • Meet with guests to discuss menus for special occasions
  • Maintain cleaning schedules for kitchen and food storage areas
  • Ensure all equipment is clean and in excellent working condition
  • Inspect supplies and work areas to ensure conformance to standards
  • Order food, equipment and supplies to ensure efficient operation
  • Ensure products are ordered per specifications and received in correct count and condition
  • Ensure deliveries follow receiving policies and procedures
  • Determine production schedules and staff requirements to ensure timely service
  • Check quantity and quality of received products
  • Determine food presentation and create decorative displays
  • Meet with sales representatives to negotiate prices and orders
  • Coordinate planning, budgeting or purchasing for food operations
  • Estimate amounts and costs of required supplies
  • Control food cost and usage by following procedures
  • Analyze recipes to assign prices to menu items
  • Make employment and termination decisions, including interviewing and hiring
  • Provide orientation and oversee training of new kitchen employees
  • Ensure performance appraisals are completed timely
  • Instruct cooks in preparation, cooking, garnishing and presentation
  • Schedule personnel to meet business needs while controlling labor costs
  • Enforce restaurant policies on personnel and administer corrective actions
  • Oversee continuous coaching, teaching and training on equipment, cleanliness and safety
  • Demonstrate new cooking techniques or equipment to staff
