Job Requirements
- High school degree or GED required
- Associate’s degree (AA) or equivalent preferred
- ACF certification or equivalent required
- Certified Professional Food Manager certification required
- Health permit/food safety and Alcohol Awareness cards required
- Three to five years’ supervisory experience required
- Experience in a high volume environment required
- Good written and verbal communication skills
- Ability to supervise multiple levels of culinary workers
- Ability to handle heavy workload and multiple tasks with minimal supervision
- Good judgment and decision-making abilities
- Ability to interact professionally with other departments and outside contacts
- Ability to complete tasks in a fast-paced environment
- Occasional travel for training
- Must be able to work in a fast-paced, physically demanding environment
- Ability to stand, walk, reach 90% of working time
- Ability to lift and carry loads up to 50 pounds occasionally
- Must communicate clearly in English

Job Duties
- Supervises line and production cooks and stewards
- Performs all kitchen responsibilities
- Conducts ordering procedures to maintain par levels
- Ensures high standards of service efficiency, sanitation, and safety
- Conducts daily inventory walk-throughs
- Holds regular staff meetings
- Assists with labor control and assigning duties
- Develops, coaches, disciplines, and mentors staff
- Completes staff schedules based on forecasted volume
- Recommends employment needs
- Coordinates catering and banquet functions
- Ensures proper plate presentation and recipe adherence
- Maintains quality, consistency, and waste prevention
- Trains new staff members
- Notifies management of low inventory and recommends purchases
- Ensures high product quality and specifications are met
- Maintains productivity and quality standards
- Calculates COGS and resolves cost discrepancies
- Forecasts labor cost
- Maintains up-to-date product knowledge and guest communication
- Adheres to safety and sanitation practices
- Performs additional duties as assigned
