Job Requirements
- Physical exam and lift test required
- Moderate physical effort with frequent handling of medium weight objects (approx. 20-50 lbs)
- Ability to lift bags of flour weighing up to 50 lbs for 30 minutes daily, five days a week
- Frequent work in walk-in coolers and freezers with temperatures ranging from -20 to 41 F for 1 hour daily, five days a week
- Ability to work in a hot environment due to ovens and fryers for 4 hours daily, up to 5 days a week
- Use of chemicals for washing and sanitizing surrounding and equipment for 30 minutes daily, five days a week
- Prioritize safety and sanitation adherence
- Strong ability to troubleshoot equipment issues
- Willingness to work afternoon and night shifts as needed
- Must be a faithful member of The Church of Jesus Christ of Latter-day Saints with current temple recommend
Job Qualifications
- A firm commitment to the mission of BYU
- 3+ years of progressive culinary management experience, preferably in bread and donut making, including recipe development, menu management, food production and labor cost controls
- Degree from an accredited culinary school or a bachelor's degree with an emphasis in food science or another culinary-related field
- Or an equivalent combination of education and work experience
- Certified Chef de Cuisine or Executive Chef certification from the American Culinary Federation (preferred)
- 5+ years of progressive culinary management experience in a collegiate setting (preferred)
Job Duties
- Establish and administer food safety and production standards, policies, and procedures to ensure that the risk of food-borne illness is minimized
- Manage any food-borne illness allegations for donut and bread operations, including investigation, coordination with Executive Pastry Chef at the Culinary Support Center, creating written responses, and maintaining proper documentation on the resolution of each case
- Plan and execute the production of Cougar Tails year-round, including donut making, storage, icing and putting orders together for transportation
- Oversee and coordinate menu management for donuts and breads with Executive Pastry Chef, including inventory management, transfers, and purchasing activities
- Maintain recipes accurately in Eatec and regularly audit for accuracy against actual kitchen practices
- Monitor recipe costs and supply chain activities and make appropriate adjustments to maintain quality, flavor profile, and adhere to the budget
- Work with Executive Pastry Chef to create and test new recipes and menus with considerations to standardization, cost-effectiveness, relevance to customer needs, and feasibility regarding staffing and equipment resources
- Model and incorporate BYU Dining mission, vision, and values at all levels within supervised locations
- Supervise the work by direct reports, ensuring appropriate productivity, food safety, and quality, providing feedback and correction as necessary
- Take ownership for the planning and execution of large-scale events like home football games, Stadium of Fire, Hope of America
