Job Requirements

  • A firm commitment to the mission of BYU
  • 3 plus years of progressive culinary management experience preferably in bread and donut making including recipe development menu management food production and labor cost controls
  • Degree from an accredited culinary school or a bachelor's degree with an emphasis in food science or another culinary-related field or an equivalent combination of education and work experience
  • Physical exam and lift test required
  • Ability to lift bags of flour weighing up to 50 lbs for 30 minutes each day for 5 days a week
  • Ability to work frequently in walk-in coolers and freezers with temperatures ranging from -20 to 41 degrees Fahrenheit for 1 hour each day 5 days a week
  • Ability to work in hot environments due to ovens and fryers for 4 hours each day up to 5 days a week
  • Ability to use chemicals for washing and sanitizing surroundings and equipment with provided vinyl gloves for 30 minutes each day 5 days a week

Job Qualifications

  • 3 plus years of progressive culinary management experience preferably in bread and donut making including recipe development menu management food production and labor cost controls
  • Degree from an accredited culinary school or a bachelor's degree with an emphasis in food science or another culinary-related field or an equivalent combination of education and work experience
  • Certified Chef de Cuisine or Executive Chef certification from the American Culinary Federation preferred
  • 5 plus years of progressive culinary management experience in a collegiate setting preferred

Job Duties

  • Establish and administer food safety and production standards policies and procedures to ensure that the risk of food-borne illness is minimized
  • Manage any food-borne illness allegations for donut and bread operations including investigation coordination with Executive Pastry Chef creating written responses and maintaining proper documentation
  • Plan and execute the production of Cougar Tails year-round including donut making storage icing and putting orders together for transportation
  • Oversee and coordinate menu management for donuts and breads with the Executive Pastry Chef including inventory management transfers and purchasing activities
  • Maintain recipes accurately in Eatec and regularly audit for accuracy against actual kitchen practices
  • Monitor recipe costs and supply chain activities and make appropriate adjustments to maintain quality flavor profile and adhere to the budget
  • Work with the Executive Pastry Chef to create and test new recipes and menus considering standardization cost-effectiveness customer needs and feasibility regarding staffing and equipment resources
  • Model and incorporate BYU Dining mission vision and values at all levels within supervised locations
  • Supervise the work of direct reports ensuring appropriate productivity food safety and quality and provide feedback and correction to support success
  • Take ownership of the planning and execution of large-scale events like home football games Stadium of Fire and Hope of America
