Job Requirements

  • High school graduate or vocational training certificate
  • minimum 18 years of age to serve alcoholic beverages
  • 1-3 years experience as a food and beverage outlet supervisor or assistant manager
  • must hold or obtain a state-approved Food Manager Certification within 30 days of hire
  • knowledge of various food service styles

Job Qualifications

  • must hold or obtain a state-approved Food Manager Certification within 30 days of hire
  • knowledge of various food service styles
  • fluency in English with strong written, verbal, and non-verbal communication skills
  • ability to compute basic arithmetic
  • familiarity with food and beverage cost controls
  • ability to enforce Forbes 5 Star standards and policies

Job Duties

  • Maintain complete knowledge of all Mansions food and beverage policies, service procedures, and standards
  • ensure full compliance with Florida Department of Health regulations by maintaining and inspecting all food and beverage areas for proper health, safety, and sanitation standards
  • conduct regular inspections of kitchen, storage, and service areas to verify adherence to sanitation protocols, temperature controls, and hygiene practices
  • maintain detailed and accurate temperature logs for all food items, ensuring compliance with regulations
  • coordinate with culinary and stewarding teams to ensure food preparation and service areas meet or exceed standards
  • supervise and coordinate daily operations of the continental breakfast, poolside restaurant, and juice bar
  • anticipate guest and resident needs, providing attentive and personalized service
  • monitor staff performance and appearance, providing corrective guidance
  • conduct pre-shift briefings and review weekly staffing schedules
  • train and coach team members on service standards, product knowledge, and POS procedures
  • maintain positive team morale and promote a cooperative working environment
  • review daily sales performance and reconcile discrepancies
  • establish and maintain par levels for supplies and equipment
  • submit requisitions and follow up on delivery
  • oversee menu accuracy, specials, and signage
  • monitor food presentation and beverage service quality
  • oversee opening and closing procedures
  • access POS system for reporting and transaction review
  • handle voids, adjustments, and payment issues
  • prepare daily handover notes
  • track daily and weekly revenue against budget
  • assist in inventory control and monthly stock counts
  • collaborate with engineering and pool team for maintenance needs
  • hold quarterly meetings focused on promotions, menus, and special events
  • attend designated meetings and relay relevant information
  • adapt to additional responsibilities as assigned
  • assist in planning and executing food and beverage promotions and events
  • participate in training programs and property initiatives
  • assist in interviewing and onboarding team members
  • conduct weekly meetings with the Chef de Partie
  • support in forecasting and departmental meetings
  • expedite service as needed
  • update and maintain POS menu data
  • complete required administrative duties
