Job Duties

  • Supervise all F&B outlets including meeting/catering facilities
  • Communicate with sales department to facilitate effective and professional delivery of all meetings and banquet contracts
  • Assist with work schedules in accordance with forecasts, staffing guidelines and labor productivity goals
  • Enforce hotel's cash handling policies and procedures
  • Coordinate supply purchases and monitor inventory of supplies to prevent shortages
  • Assist with formalizing and maintaining SOPs and create and execute training program for department
  • Ensure beverage servers are trained in local and state beverage service laws and comply with service policies
  • Know menu details including prices, food composition, daily specials, plating procedures and promotions
  • Maintain food and beverage control such as portion control and liquor control
  • Participate in month-end inventory as needed
  • Participate in daily operation of restaurant/outlets, including performing server, host/hostess, or cashier duties when necessary
  • Ensure room service is provided accurately and promptly, with daily tray retrieval and callbacks
  • Receive and address guest feedback on overall restaurant experience
  • Maintain high standards of cleanliness and décor
  • Assist in menu development for bar, outlets, and catering menus
  • Control costs, limit waste, breakage, theft, minimize comps, conduct price shopping, and labor management
  • Provide safety orientation and training specific to department and position
  • Promote company safety policies and participate in safety committee meetings
  • Support hotel goals in service and profitability
  • Hold self and others accountable for results
  • Foster high employee morale and performance culture
  • Provide strong leadership and motivate staff
  • Respond to guest and employee concerns in a timely and courteous manner
  • Coach, motivate, lead and resolve employee concerns with feedback
  • Maintain documentation for performance, attendance, and corrective actions
  • Collaborate with GM/HR on terminations
  • Schedule staffing and assignments while controlling payroll
  • Interview, select, train and orient employees
  • Set and adjust pay rates and status of direct reports
  • Ensure payroll compliance including PTO and holiday pay
  • Review daily time and attendance punches and maintain attendance logs
  • Manage workers' compensation claims with GM/HR
  • Keep staff informed of hotel events, policies using meetings, memos or bulletins
  • Attend and participate in department manager meetings
  • Participate in annual budgeting and manage department expenses
  • Assume managerial responsibilities in absence of GM
  • Maintain knowledge of emergency procedures
