Job Requirements

  • Bachelor’s degree or formal culinary education
  • 5 years of progressive Food and Beverage management experience including multiple outlets
  • Thorough knowledge of casual and fine dining food and beverage operations including wine knowledge
  • Ability to work a flexible schedule including evenings, weekends and holidays
  • Hotel and/or private club experience preferred
  • Must have Liquor Commission Card and TB Clearance

Job Duties

  • Assists with managing and overseeing the Food & Beverage team to ensure a positive and cohesive work environment
  • Provides delegation of duties to ensure service is delivered to a quality expected of a high-end private club
  • Assists with hiring, training, and supervising Food & Beverage employees
  • Evaluates staff performance and assists with conducting performance reviews
  • Assists with scheduling Food & Beverage employees and reviewing/approving timesheets
  • Assists in ensuring training of each team member at their designated tasks and crossover training to develop them in other areas
  • Assures all employees are trained on equipment and all safety and sanitation procedures
  • Develops and/or assists with implementation of policies and procedures for all Food & Beverage activities
  • Assists in ensuring all standard operating procedures for revenue and cost control are in place and consistently utilized
  • Ensures proper reconciliation of Point-of-Sale systems and invoice processing
  • Oversees the beverage program including wine, cocktail, and beer lists
  • Assists in inventory procedures and verification
  • Maintains the appearance, upkeep and cleanliness of all Food & Beverage equipment and facilities
  • Observes and ensures compliance with health, safety, sanitation laws and Honolulu Liquor Commission regulations
  • Provides immediate and timely service to members and guests
  • Investigates and resolves service and food quality complaints
  • Attends staff and management meetings
  • Assists in coordinating and overseeing Food & Beverage service and staffing during the Sony Open
