Job Requirements

  • One year of experience working in a large food/dietary service department in an institutional facility
  • No felony convictions
  • Must be of good moral character
  • Ability to follow oral and written instructions
  • Ability to read English sufficiently to understand therapeutic diets, worksheets, and recipes
  • Ability to work long periods standing under fluctuating temperature conditions
  • Ability to lift, carry, or push supplies up to 50 pounds
  • Ability to maintain composure and professionalism working with inmates in a secure environment
  • Ability to write simple reports and maintain records
  • Ability to operate kitchen equipment
  • Physical ability to lift, bend, stoop, stand, reach overhead, push, pull, squat, twist, and turn

Job Qualifications

  • One year of experience in a large food/dietary service department in an institutional facility
  • Knowledge of nutrition and dietetics for menu planning and special diets
  • Ability to follow oral and written instructions
  • Skill in operating kitchen equipment
  • Ability to maintain professional attitude in a secure environment
  • Ability to write simple reports and maintain production records
  • Basic math skills for inventory and food calculations
  • Knowledge of sanitation, safety, and personal hygiene practices in food service
  • Ability to manage inventory and measure food quantities accurately

Job Duties

  • Confer with Food Service Supervisor regarding duties, standards, procedures, and other matters relating to food service
  • Check menus for all meals according to diet sheet
  • Update cardex and explain special diets to cooks
  • Prepare daily tallies of food orders and record on production sheet
  • Check trays on tray line for attractiveness and accurate compliance with diet sheets
  • Load trays on carts and deliver to destination
  • Assist in staff scheduling and train Assistant Cook I on proper methods, kitchen equipment operation, food arrangement, sanitation, and safety standards
  • Serve as designated in charge in absence of Food Service Director, Supervisor, or Dietitian
  • Provide input for Assistant Cook I evaluations
  • Assist in various kitchen areas including cook/chill kettle, bakery, prep room, and catering events
  • Fill in for Assistant Cook I as needed
